Castel del Monte D.O.C.

Witnesses the happy result of the adaptation to the Mediterranean climate of the Chardonnay on the limestone hills of the DOC Castel del Monte. The grapes are harvested in mid-August and fermented at controlled temperatures. The contact with the lees for a few months in cement tanks allows to obtain a wine with pronounced personality, typical of the variety, and a great balance between complexity and freshness that goes well with seafood dishes.

  • Variety: 100% Chardonnay
  • Grape harvest: Mid-August. Vineyard yield: 90-100 q/ha
  • Wine making: Fermentation in steel 9-10 days at 18°C.
  • Aging: 3-4 months in glass-lined cement vats on the lees.
  • Tasting notes: Deep straw yellow; intense, multi-layered bouquet with notes of pear and peach blossom; fruit-rich, crisp palate with good length and complexity.
  • Cellaring: 2-3 years
  • Alcohol: 13%
