Rivera produces Primocanto, a 'novello' or nouveau-style wine, from native grape varieties of the Castel del Monte DOC area such as montepulciano and uva di Troia. They are picked into small boxes to ensure that the grapes are whole and in perfect condition. About 60% of the grapes are given carbonic maceration, a technique that gives novello wines their unique characteristics of freshness, intense grape aromas, and heady youthfulness. The qualities of the montepulciano grape marry extremely well with full body that is the contribution of the uva di Troia. This novello shows a lovely purple-edged ruby, rich fragrances of fresh-picked wild red berries, in particular ripe raspberry.
