Furfante is Rivera's most refreshing lightly-effervescent red wine. It is produced from varieties long-traditional to north-central Puglia, with grapes that have been rigorously quality-selected. It is crisp and fruity, displaying an appealing effervescence. Well chilled, it is an excellent aperitif wine, as well as a delicious, easy-drinking partner to soups and pastas with full-flavored sauces.

GROWING AREA
Hills and pre-hills of the Murgia area, northwest of Bari.
GRAPES
50% nero di Troia and 50% Montepulciano.
VINEYARDS
Trained to the traditional pergola pugliese and to vertical trellising, planted in deep limestone soils at elevations of 180-200 metres. Yield per hectare varies between 100 and 120 q./ha.
VINIFICATION
The grapes are harvested in the first ten days of October. The must macerates on the skins 4-5 days in steel tanks, then the fermentation continues for in cement vats for 4-5 days at 22-25°C.
MATURATION
The wine matures for 4 months in cement vats; after refrigeration and filtration it is bottled in March.

Alcohol 12%; total acidity: 5.60 g/l; pH 3.35; residual sugar: 2.0 g/l; total SO2: 80 mg/l.
SENSORY PROFILE
Ruby reed in appearance; lively bouquet; smooth, fruity palate, with a fine balance between fruit and body.
SERVING SUGGESTIONS
Its liveliness and moderate alcohol make it the ideal choice for an aperitif wine, and it is delicious with pizza and well as with fish. Serve at 12°C.
