Moscato di Trani D.O.C. is one of the truly classic dessert wines of Apulia. The growing area par excellence is the commune of Trani, whose tufaceous soils allow this grape variety to show its best. Some head-trained vineyards are planted in no-longer-used tufa quarries called 'tufare'.

VINEYARDS
Head-trained or spurred cordon planted in deep tufaceous soils, with yields of 50-60 q/h.
VINIFICATION
The grapes are picked in late September when extra-ripe. After a very light pressing, the must ferments at 18°C for about 15 days in stainless steel.
MATURATION
AThe wine matures about 4 months in new French oak barrels, where it acquires a delicate spicy nuance.

Alcohol 14%; total acidity 5.70 g/l; pH 3.10; residual sugar 70 g/l; S02 totale 110 mg/l.
TASTING NOTES
Lively, deep straw-yellow in hue; classic moscato nose, releasing nuances of candied pineapple and toasty oak; heady warmth on the palate, rich and complex, sweet but showing a clean, crisp finish that practically compels another sip.
SERVING SUGGESTIONS
The classic pairing with tea biscuits and light sweets, but try it as well with full-flavoured canapés and with aromatic, but not sharp, cheeses. Best served chilled.
