This is a crisp, lightly sparkling version of that famous Apulia D.O.C. white wine. The vineyards, head-trained or vertical trellised, are planted to the verdeca and bianco d'Alessano varieties in the Locorotondo area, and translate into wine the sunny cheerfulness of the enchanting Valle d'Itria.

GROWING AREA
Locorotondo D.O.C. area, which covers the hill areas of the Murgia south of Bari.
GRAPE VARIETIES
50% Verdeca, 50% Bianco d'Alessano.
VINEYARDS
Planted in reddish, rocky soils at an altitude of 300-350 metres in the picturesque Valle d'Itria, they are trained to the low vertical trellis system and yield an average of 80-90 q/h.
VINIFICATION
The grapes are picked in the first week in October. The settled must is inoculated with cultured yeasts, and then given a 10-day fermentation at 18°C in stainless steel.
MATURATION
The wine is ready for release 6-7 months after the harvest.
TECHNICAL DATA
Alcohol 11.5%; total acidity 5.70 g/l; pH 3.20; residual sugar 3.5 g/l; total S02 90 mg/l.
TASTING NOTES
Light straw yellow in colour; slight 'fizziness' on the nose, with classic varietal aromas of mown hay; refreshing and delicate on the palate.
SERVING SUGGESTIONS
Its moderate alcohol, crisp acidity, and slight effervescence make it ideal as an aperitif or with seafood antipasti and with any dish featuring fish.
