Violante is the result of Rivera's wish to marry Nero di Troia's classic complexity and marked scent of violets to a crisp fruitiness and early approachability. This wine offers generous, forward aromas and flavours, and at the same time more than adequate structure and body. Enjoy at cool room temperature either by itself or with soups, pastas with hearty sauces, and with meat dishes.

Territory of Andria in the northern part of "Castel del Monte" D.O.C. zone.

100% Nero di Troia.
VINEYARDS
Planted on deep calcareous soils at an altitude of 200-230 metres, the vines are trained to the spurred cordon system at 4,800 vines per hectare. Yield is kept as low as 110 quintals per hectare.
VINIFICATION
Harvest is carried out in the third week of October. A 8-10-day maceration in stainless steel vats with careful pump-overs and delestage ensures the extraction of aromatic and colour components without exceeding in tannin content.
MATURATION
The wine is aged for 1 year in vitrified concrete vats in order to have it matured without loosing its fresh and fruity character. Finally it is released after a few months of bottle ageing.
TECHNICAL DATA
Alcohol 13%; total acidity 5.60 g/l; pH 3.40; residual sugar 1.8 g/l; total S02 90 mg/l.
TASTING NOTES
Deep and bright purple colour; intense and fresh bouquet of red berries with the characteristic violet notes; full, but fresh and fruity palate with a good balance between fruit and structure.
SERVING SUGGESTIONS
Perfectly complements earthy soups, pasta and meats, but it is also very pleasant on its own. Serve at cellar temperature.
